Our chefs arrive to site early and immediately get to prepping and cooking. Our speciality roasts require plenty of time to cook properly; the 4-6 hours that we have them on the spit before is how they get their perfect tender meatiness and crisp texturing as the flavour and seasoning is also able to marinate right through every part of the meat for lovely juiciness and intense flavour in every bite. We also prepare all of our sides, canapes, salads, and desserts fresh on site too for better serving come mealtime. Some of these canapes can be served upon guest entry along with a drink while guests mingle and take photos.
