Our chef and assistants arrived early in the afternoon in order to freshly prepare the meat to be roasted, and once scored all over and covered in plenty of water and salt, it was sizzling away for hours on end, slowly but surely. Later in the day, we prepared our yummy apple sauce and stuffing, sliced the rolls and arranged them with wraps, and set out the condiments ready for the guests to arrive to a delicious feast.
